is there a way to set a certain number of posts a member must have in order to view a certain forum?
I thought there was.... You'd need a plugin.

Not sure I've ever seen one. As a start, try searching the Mybb mods site.
No need for a plugin.
1. Create a new usergroup, copying permissions from the Registered group.
2. Change the permissions of the original Registered group so they can't access the forum(s) in question.
3. Create a Group Promotion to move users from the Registered group to the new group after so many posts.
But it doesn't let me select certain forum areas for the users to not view?
