Is there a way to set the admin to get an email upon new posts to the site?
I've looked through the CP several times but cannot seem to find this...

You can subscribe to threads, but you can't be notified of any posts made in the whole forum.

Do you know of an existing plugin that can get all new posts/threads emailed to the admin/mods?

On the contrary, getting emails on every post being made is lame IMO. Can you imagine such a "feature" on a board that gets like hundreds or thousands of posts, your inbox would be flooded!
Anyway, you'll need a plugin to do what you want. Moved to plugin requests.

You can get notified upon new thread buy subscribing to the forum. I agree, getting emailed is quite annoying on larger boards, I generally only do that if it's for an important forum that isn't posted in frequently.
