I suspect a bad plugin, so can I fix that problem by simply restoring the mybb_templates table from a previous backup?

I can't be sure of the best way for you to fix this. I guess part of it is finding what plugin did it. And are you sure it changed the templates permanent in DB or is it messing them up dynamically through a hook. You may need to add NO_PLUGINS to global and see if your template problems disappear. If so then it's an existing running plugin. Otherwise if indeed your templates were changed you should find out what it did and attempt a reversal.
