Im curious on the timezone settings. I THINK my timezone is the -5 one? But its not changing the time at all. Is there something else I need to do?

If you're changing it in the ACP it won't have any effect on you, it'll only affect it for guests and new users, you have to change the setting in the User CP for it to affect you.
