my forums change out of random and certain stuff got deleted or moved on my main index page. Does anybody know why?

What exactly seems to be the problem with your forum? Everything is working great over here.
Yesterday I added New categories with forum topics and made new post to my forums. Today I visited my website and everything changed back to how it use to be yesterday instead of the new look and change that I gave to it
So the new forums, threads and new theme you had added are no longer there?
Yup, Everything that I've added or changed has been resetting back to normal.
If you really didn't do anything, I would contact your web host about this. Ask them if there were any issues with the server and if they had to restore backups.
I will talk with them and let them know about the problem. This has also happen to me one other time few weeks ago. Weird
So it happened before? Then it's definitely an issue with your web host. I highly doubt a plugin or a misconfiguration could be causing it.
