I have even replaced /images/peaceblue/english/rateuser.gif with an overwrite, then another overwrite of a completely custom logo.

PeaceBlue is a 1.4 theme so you'll have to go into your AdminCP to Templates & Style > Templates > Find Updated Templates. There you can update them yourself or revert them back to the original so that they'll be compatible with 1.6.
