Sorry for the bad title, but where can I find the sex register template?
I forced users to choose their sex on registration.
Because I would like to edit the text.

There is no template like that. If you want to change the Sex text, go to ACP -> Configuration -> Custom Profile Fields -> blue Options box next to Sex -> Edit Field -> replace Sex in Title to whatever you want
