Sorry for what I am sure is a newbie question. But how do I stop replies in a thread from containing all the previous replies?

perhaps, it is because we are using the reply button and the not new reply button

^ if we click on Reply button just below the post then reply includes that post.
if the post contains others replies as quotes then they also add to the new reply.

to prevent that quoting, you can use New Reply button available at the top & also at the bottom of the topic.

and that's a plain "reply"

^ basically quick reply doesn't use automatic quote of others posts.
multi quote button (shown as Quote) needs to be used to add the Quote

if you want to remove the quoting nature of the Reply button then that can be done.

forum admin panel >> quick access menu (left side) >> templates >> your theme templates >>
Post Bit Templates >> postbit_quote
remove &replyto={$post['pid']} and save the template
