In the Mod CP, I would like to remove the "Announcements" privilege and "Moderator Logs" from the Forums & Posts menu and also the "Profile Editor" from the Users menu. Please can you tell me which file(s) need to be edited?

You can use MyPermissions to deny access. Have a look at this tutorial.
You can also edit the templates to remove the links:
AdminCP -> Templates & Style -> Templates -> *Theme* -> Moderator Control Panel Templates -> modcp_nav

Just one small issue, if I may. Super Admin shows in Profile Editing and IP Search in Mod CP Is there a way to stop that?
