Is there a setting to hide the number of posts a member has made?

Can I hide or change the user label...i.e., "Junior member"?

do you want to remove them from everywhere on the forum ? they are shown at the posts, member profile, members list page ..

I'm not entirely sure, but you can always stop it from showing next to posts and on the profile by removing it from the templates

Yep, Admin CP > Users & Groups > User Titles

The issue is that this parameter is used by some to target others. For example, high posters are challenged as "Extreme". To avoid this, I want to turn it off everywhere visible to others.

you can remove :
{$lang->postbit_posts} {$post['postnum']} from postbit_author_user template
{$memprofile['postnum']} ({$lang->ppd_percent_total}) from member_profile template
<td class="{$alt_bg}" align="center">{$user['postnum']}</td> from memberlist_user template

you may also have to take care of the related table cells / columns
