Creating a theme and moving icons

I've created a theme through the Admin CP
My image folder is now images/myimages

To avoid any broken image links, I've copied the FOLDERS "engilish" and "icons" into "myimages".

Is that the proper way to do it?

I don't know, but that should work for that theme.

You could just leave them in the normal image directory and put all custom images in a new direcory. You just need to change the CSS then.
