A moderators ability to delete posts is enabled with access to the moderation CP, if you wanted to disable features you would need to create a new usergroup and assign it specific rights. Editing and deleting own posts is only relevant if you wanted the member to be unable to delete posts and threads they created.

You can edit the permission (abilities) of  a moderator without creating any new groups..
