Is there the ability to download a thread? In various file formats? PDF. Text. .doc
We used to have that on vBulletin and would like it again but I cannot see the option.

No, there is no option for downloading to file.
Instead you can "print" the thread using the forum option or using Archive mode - and save the page to a document from the browser menu. [ExiTuS]

IIRC, direct downloading facility for a thread might not be available.
printable version of a thread is available through a link at bottom of every thread. it can be used to save the thread in required format [save as html / copy to wordprocessor .. etc] [example] 
You can use printable version as .m. has suggested or you can use Web Page downloader extension from Chrome Store.
