I don't need support but I'm curious if there is a setting or an extension that forces posts by guests to be approved before they show up on the forum?  I want to allow posts by guests but they have to be approved first.

You can enable moderation of new threads and / or posts by going to your ACP (Located at yourforum.tld/admin)> Users & Groups > Groups (on the left sidebar) > Guests > Forums and posts > Moderate new threads / Moderate new posts.
