Where do I edit the text registrants read when they press "I Agree" at sign up?

In ACP, go to Configuration. Click Languages and then under Options, choose edit language variables. The agreement is in the member.lang.php file almost half way down.

Could also click the "Quick Phrases" tab to edit it.
   

Member Templates --> member_register_agreement if you want to just edit the whole template.
