Hi all i am trying to workout how do i edit this - - i cannot find the code anywhere!

A screenshot doesn't help much. If template start/end comments are enabled for that board, you should be able to find the relevant templates by inspecting the element of interest using browser developer tools.
Search for that author in Extend: https://community.mybb.com/mods.php?action=search My bet is NetPen.

Also why does my site not auto update the forum statistics? I have to reload/refresh teh cache for the stats to update... How to fix?

The author of NetPen is misharnet - who I note is barred. So I wouldn't expect any updates through MyBB. Also the theme version in Extend last updated 2018-02-09.
