Just go inside the ./inc/languages/ folder and delete your language pack.

There's slightly more to it than that and maybe things have changed since 2010.

In 1.8.34 I tried to remove "English (UK)" after making sure that I had set all users English American but could no longer access the AdminCP. I got a blank screen with a message that told me it couldn't find the englishgb language files.

Took a while for me to realise/remember that I still had my AdminCP language set to English (UK). Once I'd set that to English American, I could then delete the UK files and all was well.
