So the next major MyBB after 1.6 would be 2.0? I thought the new version numbering system would of included a 1.8 version?

Yes, however since the next major release will have core changes, the developers feel best that it attains a new version number.
Typically, in the software community, 1.0 == feature complete (it does everything it was originally meant to with minimal (preferably no) known bugs), and any x.0 after is an almost complete rewrite of the core. This could be done for many reasons: adding new features, improving maintainability, improving APIs, dumping tightly integrated but outdated software, and many more. In this case, I would guess they're going with the first three reasons I gave.
