AdminCP -> Templates -> Modify

Change the Forum Display -> forumdisplay_subforums template.

Thats cause it uses a class; go to Themes - Modify/Delete - Choose Your Theme - Edit Theme Style - Table Sub Headers (Category Backgrounds) - Change to your needs.
