It's possble doing this, to prevent the user from modification, while allow moderation and administration to modificate the TITLE of a thread?

I am removed the subject input-box from editpost and replaced with just {$subject}, then added {$subject} as a input hidden-field but that means I can no longer edit myself

You can stop them from editing the thread/post completely via forum permissions.

AdminCP --> Forums & Posts --> Choose the forum you want to stop subject edits --> Permissions --> Click Set/Edit Permissions (Far Right) --> Untick "Can edit own posts".

Do this for all the forums if you want to stop it globally.

The problem is, I'd like the mto edit post, but not thread-subject if they are OP

If you remove the subject from edit post, you can rename the thread title by hold down your click at the thread title. But if your member know this trick, they can do too.

If you removed that AJAX then it would stop you changing thread names as well.
