Can someone tell me how to add an icon (<i class='fas fa-mug-hot'></i>) to the link at the top of the "#panel .lower ul.user_links" ?

^ global templates should be having plugin related templates. look in unreadPosts_linkCounter template.

It is a useful plugin, but one thing could be improved:

If I have 15 unread posts in one thread with 13 pages and I start reading on page 12, the "unread post" notice disappears when I go to the next page.

is it not possible to let the plugin check particular pages?

It should work in that way.
It marked thread read time as last visible post time.

Behavior you desribed is in default, clean MyBB, without that plugin.

also in changlog.txt is no description about changes to 1.14 Last point is:

Version 1.13
    * Add fixes for mod tools
    * Add fixes for mark as read
    * It's last version - mod will not updated anymore
