It doesn't really matter which version you are updating from. If you're coming from Google SEO Legacy or Google SEO 1.1.x or older, revert functions.php before updating. Note that the current version of Google SEO also needs a current version of MyBB to work (1.6.4+).
Update: we made a little mistake in the installation...
Change the URL scheme in the settings and add a new rewrite rule to your .htaccess
Edit the settings for the URLS, then edit the .htaccess file to suit the changes. As explained in the documentation I'm fairly sure.

I have an error coming up on the actual plugin but my site seems fine and since updating and changing the latest functions.php with the google seo updates it seems to be working completely how it should. Should I just ignore these errors?

Redirect is enabled and URL is passive. Redirecting SEO URLs back to MyBB's default URLs.

You're supposed to let the plugin make those changes itself... revert functions.php to original and click apply changes in the plugin status
I have a question... If I uninstall the plugin, is it going to drop my current position in Google or is it going to affect forum in Google?
See the documentation on uninstalling. If you want to revert to MyBB default URLs, the plugin can redirect Google SEO URLs to MyBB URLs.
